Clearwater Innovative Shellfish Challenge

 

Clearwater developed the Innovative Shellfish Challenge in November 2015 in the United Arab Emirates (UAE) to increase awareness of our premium, high-quality seafood. This event also provides chefs with the opportunity to create an innovative dish using a Clearwater product as the hero ingredient. The winner received an all-expenses paid trip to Nova Scotia, which included an innovation session with Clearwater’s very own Corporate Chef Stefan Czapalay.

In January 2016, the first Clearwater Innovative Shellfish Challenge was held at the Emirates Culinary Academy. 20 finalists were selected from Dubai and Abu Dhabi and judged by a panel of three World Association of Chefs’ Societies accredited member. Each finalist prepared four dishes for the judges to taste and review based on the following criteria:

  • Presentation
  • Innovation
  • Taste
  • Nutritional balance
  • Hygiene

The winning recipe was Majaphit Empire Seafood Delights, created by Chef Komang Wirantawan from The Club restaurant in Abu Dhabi. Chef Komang’s dish featured Clearwater’s Nova Scotia Prime Lobster Meat, Canadian Sea Scallops, Snow Crab and Arctic Surf Clams.
