1 lb Clearwater Canadian Coldwater Shrimp, thawed and drained 1/3 cup sweet Thai chili sauce 1 medium tomato, diced 1/3 cup kalamata olives, pitted and coarsely chopped 2 tbsp red onion, finely chopped 2 tbsp fresh cilantro, coarsely chopped 1 tbsp olive oil 1-2 flat bread salt & pepper to taste
1. Preheat Grill or Barbeque to medium heat. 2. Mix together Shrimp, tomato, olives and red onion. 3. Brush Flatbread with Olive oil and grill 2-3 minutes. 4. Remove from heat, brush with Sweet Thai Chili sauce on top side.
Place shrimp mixture over Chili sauce and sprinkle with cilantro. Cut into portions and serve immediately
