Arctic Surf Clam Gunkan Maki

Method

1. Cut a strip of nori from the nori sheet. Wrap the nori strip firmly but gently around a ball of sushi rice and lightly press together in order to allow the rice to stick to the nori.
2. Slice the Arctic Surf Clams in half (prime cut), scrape the insides to clean, then julienne chop them and the cucumber.
3. Add the Tobiko and mayonnaise. Mix together.
4. Place a tablespoon of this mixture on top of the rice and serve.
