Clearwater Split Lobster are produced using a specialized High Pressure Processing (HPP) system. The HPP process detaches the raw meat from the shell, the lobster is then cleaned (viscera removed) and put through a splitting machine. The split lobster is then individually quick frozen within a half hour. This ensures a “live” lobster taste and texture, as well as a simplified eating experience.
