Harvesting and Processing

Clearwater Raw Lobster are produced using a specialized High Pressure Processing (HPP) system. The HPP process detaches the raw meat from the shell and is frozen within a half hour. This ensures premium “live” lobster taste and texture and a simplified eating experience.
