Argentine Scallops
¼ cup
Beer (light)
1 tsp. (3 cloves)
Garlic, minced fine
1 bunch
Green onions, chopped
2 tbsp.
Butter
1 tbsp.
Flour
1/3 cup
White Cheddar (extra sharp), grated
¼ cup
Bread crumbs
pinch
Salt and pepper
4 ears
Corn on the cob (optional)
Directions
Using heavy aluminum foil create 4 pouches, which are double thickness. Spread each with butter. Divide onions, garlic, and beer between all 4 packets. Toss scallops with flour and season well with a pinch of salt and pepper. Carefully fold pouch taking care not to spill the beer. Place pouches on a pre-heated grill folded side up and allow to cook for about 5-7 minutes (it takes time for heat to go through the pouch and this depends on temperature of grill).
You will know when the scallops are ready, as the pouch will start steaming and smelling good. Open pouch carefully and sprinkle with cheese and bread crumbs. Leave packets open and close the lid of the grill for 30 seconds. Serve at once with grilled corn on the cob and crusty bread.
