Sautéed Clearwater Cod Fillets

| 1 lb. | Clearwater cod fillets |
| 1 tbsp. | Oil or margarine |
| 1 cup | Flour, fine cornmeal, bread crumbs or finely chopped nuts |
- Lightly pat the fillets dry.
- Dust with coating of your choice. Pat to remove excess.
- Heat oil or margarine over medium heat.
- Add fillets and cook until lightly browned.
- Turn over and continue cooking until well browned and opaque through the thickest part.
- Cook for 10 minutes per inch thickness.
- Pour pan juices over the fillets and serve immediately.
