Sautéed Clearwater Cod Fillets

Ingredients

1 lb. Clearwater cod fillets
1 tbsp.Oil or margarine
1 cupFlour, fine cornmeal, bread crumbs or finely chopped nuts


Directions

  • Lightly pat the fillets dry.
  • Dust with coating of your choice. Pat to remove excess.
  • Heat oil or margarine over medium heat.
  • Add fillets and cook until lightly browned.
  • Turn over and continue cooking until well browned and opaque through the thickest part.
  • Cook for 10 minutes per inch thickness.
  • Pour pan juices over the fillets and serve immediately.
