Sea Scallops with Pasta
Recipes
Ingredients
1 cup
Sea scallops
2 Tbsp
Olive oil
½
Red Pepper, diced
1 whole
Tomato, diced
1 tsp. (3 cloves)
Garlic, minced
1 bunch
Green onions, chopped
1 tsp.
Fresh thyme, leaves only (optional)
to taste
Salt and pepper
1 lb.
Spaghetti or other long pasta
Directions
In a large pot bring 2 quarts of water to a boil with 3 tbsp. of salt.
Cook pasta as per manufacturers directions.
In a heavy bottom pan over medium-high heat, add 1 tbsp. of olive oil.
Season scallops with salt & pepper and sauté for 2 minutes until golden.
Turn scallops and add garlic, peppers, green onions, and remaining olive oil and sauté for 1 minute.
Add fresh thyme and chopped tomato, toss together.
Divide pasta and scallops between 4 bowls and serve at once.
