Sea Scallops with Pasta

Sea Scallops w Pasta_sm

Ingredients

1 cupSea scallops
2 Tbsp Olive oil
½Red Pepper, diced
1 wholeTomato, diced
1 tsp. (3 cloves) Garlic, minced
1 bunchGreen onions, chopped
1 tsp.Fresh thyme, leaves only (optional)
to tasteSalt and pepper
1 lb. Spaghetti or other long pasta


Directions
  • In a large pot bring 2 quarts of water to a boil with 3 tbsp. of salt. 
  • Cook pasta as per manufacturers directions.
  • In a heavy bottom pan over medium-high heat, add 1 tbsp. of olive oil. 
  • Season scallops with salt & pepper and sauté for 2 minutes until golden. 
  • Turn scallops and add garlic, peppers, green onions, and remaining olive oil and sauté for 1 minute. 
  • Add fresh thyme and chopped tomato, toss together. 
  • Divide pasta and scallops between 4 bowls and serve at once.
