Coldwater Shrimp, Leek & Spinach Linguine

Ingredients

1 head Iceberg lettuce, shredded
½ smallRed cabbage, shredded
2 lbs. Cold water shrimp, thawed and patted dry
½ Red onion, finely diced
1 Jalapeno, diced with seeds
1 cupFresh corn kernels (if frozen, defrosted)
1 cupBlack beans, rinsed
1 cupGrape tomatoes, halved
½ cup Kalamata olives, pitted
½ cupCilantro, roughly chopped
1Avocado, diced
½ cupSouthwest salad dressing
½ Lime (zest and juice)
Tortilla chips for garnish

  
Directions

  • Combine all ingredients in large bowl. Add in Southwest salad dressing, sprinkle with lime juice and zest and toss gently.
  • Garnish with tortilla chips.
